petit saucisson typique de Parme

Il s’agit d’un petit saucisson, typique de la Bassa Parmense (Plaine de Parme). Il naît de la même coupe de viande du culatello de Zibello Dop, salée et épicée, mise en boyau naturel et ficelée à la main. Le boyau, particulièrement fin et poreux, en favorise une maturation rapide. On peut le goûter encore tendre, accompagné d’un Lambrusco.

It is a small sausage, typical from Parma lowlands. It is obtained from the same cut of meat as P.D.O. Culatello di Zibello. After being salted and spiced up it is manually put into a natural casing and tied. The casing, which is particularly thin and porous, favours its quick curing. It can be tasted when still tender, accompanied by Lambrusco wine.
