Prosciutto di Parma AOP

Une excellence de notre terroir et notre fleuron: pour le produire on utilise des cuisses de porc lourds italiens, salées manuellement (sel sec sur la couenne, sel humide sur la partie maigre). Pendant trois semaines, les jambons absorbent le sel dans une chambre humide (80%) et froide (+1 à +4°), puis ils reposent pendant trois mois en se séchant. Après lavage, commence la maturation. Maintenant, c’est l’air qui fait sa tâche ; provenant de la mer, avant d’arriver dans la vallée il a absorbé les senteurs des bois des Apennins. Selon les conditions météo, on ouvre les fenêtres et cela continue pendant neuf mois. Après, c’est le tour de la cave : le Consortium marquera les jambons avec la Couronne Ducale de qualité seulement après 12 mois. Mais pour nous, cela ne suffit pas: notre jambon attendra encore jusqu’à 18-20 mois, quand vous pourrez enfin goûter toute sa douceur pleine, nuancée, jamais doucereuse.

This is an excellent product of our territory, and the feather in our cap: to make it, we use heavy Italian pig thighs, salted by hand (damp salt on the rind and dry salt on the lean part). For three weeks the hams absorb the salt in a cell which is humid (80%) and cold (from +1 to +4 degrees), after which they are left to rest, drying slowly, for three months. They are then washed, and curing begins. It is now up to the sea air, which, before reaching the plains, has taken up the balms of the Apennine woodlands. Weather permitting, the windows are opened, and this is the procedure for the next nine months. Then the hams are taken down to the cellar: after 12 months, the Consortium will affix the Ducal Crown attesting to their quality. This is not enough for us: our ham will be kept in place for 18-20 months, when its sweetness – intense, profound, modulated, but never sugary – will be fully appreciated.
