Filetto di Lombo al peperone
This fine salami is made from Italian pigs taking care to choose the most suitable pieces. The processing begins with careful trimming and cleaning of the fat parts of the loin which is then properly massaged with salt, pepper and aromatic herbs. This phase is delicate, because the meat has to absorb the aromas which will then make it into the finished seasoning flavor. The seasoning is about two months.
