The shoulder of the pig is first trimmed together with the coppa. Salting and the addition of pepper and spices is done following the typical recipe; after resting in a refrigerated cell, the shoulder is rolled, tied with string, encased in bladder, hand bound and cooked slowly in just-boiling water. At San Secondo, a small village in the Parma lowlands of the Po Valley from which this cold cut takes its name, spalla cotta is a ritual: eaten tepid, cut into thick slices and accompanied by a glass of sweetish fresh red wine.
